there has been a newfound energy this week
to create new dishes & foods
where canning seems timely given the season
one of the recipes called for some fresh ginger
but when my order was being picked
the person filling it put in 2 large rhizomes –
where i barely needed ‘a finger’
the dangers of placing grocery orders
at least ginger isn’t off-the-charts costly
so from this, a new quest was borne
how to pickle ginger
a great pick for the gut biome
did you know that you can peel ginger
with the tip of a spoon?!
this was far, far easier than getting those
paper thin, & shear-ly beautiful slices
the ones we receive in piles with sushi dishes
the recipe maker suggested using a vegetable peeler
but to do so was going to leave a lot of waste
so used the good ol’ knife
where the slices are much thicker
& the ginger hit stronger
not nearly as subtle
perhaps this could have worked out better with a mandolin …
tomorrow, looking forward to trying it again
after it’s had some more time to pickle
the pickled beets will also be ready then
while the sauerkraut will take some more time
to “marinate” in it’s lovely own juices
